End-of-Year Lunch (Emeryville)

Pacific Rim International School
End-of-Year Luncheon
May 16, 2014

Beverage (prepared by the Infant Community):

Fresh Mint Lemonade

Appetizer:

Shio Tofu Caprese

Entrée

Green Garden Salad with Lemon-Soy Dressing

and

Pasticcio di Bietole al Forno (Italian Swiss Chard Tart)

or

Assorted Vegetable Quiches

Dessert:

Ba Bao Fan
(Eight Treasures Rice)

All of the swiss chard, potatoes, salad greens, and mint used in today’s lunch were grown in our organic vegetable garden and tended and harvested by the children. The eggs were provided by the family of Umi Radcliffe-Suzuki from their organic hens. The lemons were grown on the trees of various PRINTS families and staff. Our children are so proud to be able to say that they have not only prepared and served the food today, but that they grew it themselves as well!

Our gratitude to the family of Braden and Ethan Glover for kindly providing our place settings, tablecloths, and tents.

Thank you to Caleb Cheung for the wonderful pictures of the event.
